This wine's grapes came from cooler vineyards in the Western Cape, guaranteeing the rich fruit flavors that are hallmark of South African Sauvignon Blanc. For the Pavillion wines, our viticulturist sources the highest quality grapes from the Western Cape. Unevenly ripened bunches were cut off the vine shortly after veraison to allow the remaining berries on the vine to concentrate their flavor more. To ensure optimum retention of the exquisite fruit flavors, about 60% of the grapes were manually harvested in the early morning, with the remaining grapes plucked in the cool of the evening. Following a mild pressing, the grapes were cold-fermented in stainless steel tanks at an average temperature of 15°C, allowing the wine to retain the wine's natural, fresh frappe flavors.
