To get ripe, robust, and concentrated grapes, you must harvest them late (from the end of September to mid-October). This encourages the fermentation and maceration processes, which extract color and aroma. Hand-harvested grapes are sent to the cellar along with some of them. The grapes are destemmed and then placed in stainless steel tanks for 15–20 day macerations. After that, some of the wine is racked and stored in barrels for eight months.
